While I am on the topic of tasty curry I might as well share with you on of my own, and my partners, favorites when it comes to Thai food. The Thai green curry soup!

If it’s made properly it might just be one of the best dishes you can eat in Thailand. It is made out of coconut milk and green curry, usually green curry paste. Include some chicken, vegetables, and serve it with rice and it is good to eat any hour of the day.

I have eaten it many times and I they to make green curry soup even if I am at home or have access to a kitchen. The trick is to make it creamy and rich without letting any oil separate and make it oily and tasteless. Not all restaurants know the secret and some use water only to blend in the green curry paste.

Try it, I am sure you will like it.

My Thai green curry soup recipe

1 can of coconut milk
1-2 tbs of green curry paste
1 red chilli finely cut
1 small pinch of basil leaves
1 cup of sliced green beans
1 carrot finely sliced
Mini corns whole
1 small piece of minced ginger (about the size of a thumb nail)
2 medium sized chicken fillets cut is small bite sized pieces
Vegetable oil or olive oil

Heat up some oil in a pan and gently fry the chicken. The chicken should only be cooked slightly but not get any colour. Add the ginger and chilli and stir for about half a minute. Add the green curry paste and mix well so that all the bits of chicken are covered.
Add the coconut milk and sir well. Then add the rest of the ingredients and let it simmer for a few minutes until the chicken is thoroughly cooked and the coconut milk has taken in all the flavours. You can add some salt and more curry paste if you like. It is all about you here.
Garnish with some red pepper and basil leaves or coriander leaves. Serve with rice or noodles,
