My Spanish style omelette

Today was one of those days when I couldn’t figure out what to make for lunch.

After putting our brains together, me and my sort of sister in law, we came up with the idea of using the last potatoes to make potato wedges. Some chicken hot dogs would make a nice Spanish style omelette.
I don’t even know why I call it “Spanish”, maybe it’s not Spanish at all.
Anyway, the potato wedges was slightly marinated in some oil with garlic, salt, barbecue spice and black pepper. I mixed chopped onions, tomatoes into the scrambled eggs and added sliced hot dog to it. Served it with some black beans and parsley and there you have it.

The rest of the family enjoyed it so I guess that wasn’t the last time I make it.
