American pancakes recipe

I tried to make pirogues. Well, I did a very good try (that’s what counts right?). But I ended up putting too much milk in and realized that I had missed the eggs which would make the dough even more non-pirogue like.
So I had a bowl of mess, I had a bunch of eggs and filling for pirogues that was waiting impatiently on the counter. But what should I do with this? Certainly, I cannot just throw it away.
American pancakes?! The recipe for pancakes are not so far from the mess in the bowl. I could add eggs and some baking powder and make fluffy pancakes with it!

And so I began to add in more and more things to the mess and they turned out really good eventually. The baking powder really did the trick. I had already thrown in black pepper in my attempt of making pirogues, but theres nothing some ground cardamom can’t fix so no one even noticed (lucky me).

Here is my altered American pancakes recipe for those actually wanting to make pancakes and not pirogues.


  • 2 dl white flour
  • 3 dl milk
  • 0,5 dl brown sugar (you can use white but brown sugar gives a better taste in my opinion)
  • 1 pinch of salt
  • 2 eggs
  • 1 tbs baking powder
  • 1 tbs ground cardamom
  • 1 tsp ground cinnamon
  • Butter for frying

Mix all of the dry ingredients and spices in a bowl.
Slowly add milk and mix until smooth. Add eggs.
Whisk until everything is dissolved.
Pour a small amount of batter into your frying pan. The pancakes should be firm and golden. They will rise as you turn them over in the pan.
Serve with whipped cream, ice cream or berries. I used chocolate sauce which was delicious to.
